Ingredients For the Asian-spiced rice

  • 1 tsp ground turmeric

  • 300ml/½ pint hot chicken stock

  • ½ tsp coriander seeds

  • 4 cardamom pods, seeds only

  • 35g/1¼oz butter

  • 1 tbsp chopped fresh coriander leaves

For the coriander-crusted lamb
  • 1 tsp coriander seeds

  • ½ tsp white peppercorns

  • 1 lamb chop

  • 1 tbsp olive oil

  • 3 garlic cloves, peeled

  • 1 tbsp clear honey

  • 1 sprig fresh rosemary

  • 1 sprig fresh thyme

  • salt and freshly ground black pepper

For the rosemary oil
  • 3 tbsp olive oil

  • 2 sprigs fresh rosemary, chopped

  • 1 sprig fresh thyme, chopped

  • 1 sprig fresh flatleaf parsley, chopped
