Three Ways With Chicken, With Smoked Garlic Mash, Wilted Spinach And Peas And Broad Beans

Ingredients

Ingredients For the chicken
  • 1 x 1.25kg/2lb 2oz small chicken

  • 8-10 tbsp olive oil

  • 1 bulb smoked garlic, left whole

  • 2 sprigs fresh thyme

  • 1 bay leaf

  • 1 tsp chopped fresh thyme leaves

  • ½ lemon, zest only, plus ½ tsp lemon juice

  • salt and freshly ground black pepper

  • 1 litre/1¾ pints chicken stock

For the smoked garlic mash
  • 500g/1lb 2oz floury potatoes, peeled, chopped

  • 1 bulb smoked garlic, roasted (see above)

  • 3 tbsp olive oil

  • 110ml/4fl oz double cream

  • 110ml/4fl oz milk

  • salt and freshly ground black pepper

For the vegetables
  • 50g/2oz butter

  • 10 baby onions, peeled, blanched in a pan of boiling water

  • 50g/2oz peas, out of their pods

  • 50g/2oz broad beans, out of their pods, skins removed

  • 125ml/4½fl oz reserved chicken stock (see above)

  • 2 tbsp chopped fresh chervil

  • salt and freshly ground black pepper

  • 200g/7oz baby spinach leaves
