500g/1lb 2oz floury potatoes, peeled, chopped

110ml/4fl oz double cream
110ml/4fl oz milk
salt and freshly ground black pepper
50g/2oz butter
10 baby onions, peeled, blanched in a pan of boiling water
50g/2oz peas, out of their pods
50g/2oz broad beans, out of their pods, skins removed
125ml/4½fl oz reserved chicken stock (see above)
2 tbsp chopped fresh chervil
salt and freshly ground black pepper
200g/7oz baby spinach leaves
