Asian Fish And Chips With Sweet And Sour Pepper Dressing


Ingredients For the fish
  • 85g/3oz self-raising flour

  • 100ml/3½fl oz fizzy water

  • salt and freshly ground black pepper

  • vegetable oil, for deep frying

  • 1 trout fillet, trimmed, de-boned and cut into three pieces

For the chips
  • vegetable oil, for deep frying

  • ½ sweet potato, peeled and sliced into thin rounds on a mandoline

For the sweet and sour pepper dressing
  • 1 red pepper

  • 50ml/2fl oz red wine vinegar

  • 1 tbsp caster sugar

  • 1 tbsp tomato purée

To serve
  • 1 tbsp fresh coriander leaves
