Ingredients

Ingredients For the vanilla ice cream
  • 1 litre/1 pint 15fl oz milk

  • 170ml/6fl oz double cream

  • 50ml/1¾fl oz liquid glucose (available in the baking section of some supermarkets)

  • 40g/1½oz powdered milk

  • 7 medium eggs, yolks only

  • 200g/7¼oz caster sugar

  • 3 vanilla pods, seeds scraped out with a knife

For the candied tomatoes
  • 8 tomatoes

  • 200g/7¼oz chestnut honey

  • 2 white peppercorns

  • 2 black peppercorns

  • 2 Sichuan peppercorns

  • 2 anise seeds

  • 3 juniper berries

  • 3 cardamom pods

  • 3 coriander seeds

For the cinnamon biscuit
  • 250g/8¾oz unsalted butter

  • 80g/2¾oz confectioners' sugar

  • 1 tsp salt

  • 1 small egg, yolk only

  • 250g/8¾oz plain flour

  • 20g/¾oz fine cornmeal

  • 20g/¾oz tapioca flour

  • 1 tsp ground cinnamon

For the citrus fruit
  • 1 orange, peeled and quartered

  • 1 lime, peeled and quartered

  • 1 lemon, peeled and quartered
