Whole Roasted Sea Bass Stuffed With Lime And Herbs With Sweet And Sour Chutney

Ingredients

Ingredients For the sea bass
  • 1 sea bass, gutted, descaled, fins cut off and one side slashed at 1in/2.5cm intervals

  • sea salt and freshly ground black pepper

  • 1 handful chopped mixed fresh herbs (parsley, basil, chervil, thyme)

  • drizzle olive oil

  • 2 limes, halved

For the sweet and sour rhubarb chutney
  • 25g/1oz butter

  • 2 sticks rhubarb, roughly chopped

  • ½ orange, juice only

  • 2 tsp red wine vinegar

  • ½ tsp ground ginger

  • 1 tsp soft brown sugar

  • pinch salt

For the leeks
  • 25g/1oz butter

  • 1 leek, chopped into thick pieces

  • salt and freshly ground black pepper

For the spinach
  • 25g/1oz unsalted butter

  • 100g/3½oz spinach, washed

  • salt and freshly ground black pepper
