Prawn And Coconut Masala With Saffron Rice And Cucumber And Dill Salad

Ingredients

Ingredients For the prawn masala
  • 2 garlic cloves, finely chopped

  • ½cm/1in ginger, peeled and finely chopped

  • pinch salt

  • 3 tbsp olive oil

  • 2 tsp ground cumin

  • ½ tsp nigella seeds (also called black onion seeds)

  • 225g/8oz onions, finely chopped

  • 2 green chillies, seeds removed, finely chopped

  • ½-1 tsp chilli powder

  • 4 tbsp tomato purée

  • 450g/16oz king prawns, peeled and de-veined

  • ½ lime, juice only

  • 3 tbsp coconut milk

  • 50ml/2fl oz water

  • 1 tbsp chopped fresh coriander

For the saffron rice
  • 2 tbsp olive oil

  • 1 bay leaf

  • 5cm/2in cinnamon stick

  • 2 cardamom pods, crushed

  • 2 cloves

  • 290g/10oz basmati rice

  • 1 tsp salt

  • ½ tsp saffron strands soaked in 1 tbsp hot water

  • 425ml/15fl oz water

  • lime wedges, to serve

For the cucumber and dill salad
  • ½ lime, juice only

  • 2 tbsp olive oil

  • 1 tbsp caster sugar dissolved in 2 tbsp hot water

  • salt and freshly ground black pepper

  • ½ cucumber, peeled and cut in half lengthways, seeds scooped out with a spoon, thinly sliced

  • ½ tbsp chopped fresh dill
