Turkey Laksa

  • 2 red chillies, roughly chopped

  • 30g/1oz ginger, peeled, roughly chopped

  • 2 cloves garlic, roughly chopped

  • 1 tsp coriander seeds, toasted and ground

  • 1 tbsp fresh coriander stems

  • 1 tbsp tamarind paste (available from Asian and Middle Eastern stores)

  • 50ml/2fl oz vegetable oil

  • 250g/9oz plum tomatoes, chopped

  • 1 tbsp fish sauce (nam pla)

  • 500ml/1 pint 2fl oz chicken stock

  • 400ml/14fl oz canned coconut milk

  • 125g/4½oz skinless salmon fillet, cut into large chunks

  • 250g/9oz cooked turkey, shredded

  • 200g/7oz ready-made egg noodles, cooked according to packet instructions

To serve
  • handful fresh mint leaves, chopped

  • 2 spring onions, chopped

  • lime wedges
