Laksa

Ingredients

  • Handful bean sprouts, per person
  • 2 cups cooked chicken breast, shredded (you can also use prawns, fish, pork or vegetables)
  • 4 cups chicken stock
  • 1 x 400ml can coconut milk
  • 2 coriander roots, chopped
  • ½ tsp fish sauce
  • Bunch fresh coriander leaves, chopped
  • 1 clove garlic
  • 2 cups rice vermicelli (½ cup per person)
  • ½ cup Thai (sweet) basil, chopped
  • 2 Tbsp vegetable oil
  • 3 Tbsp Laksa Paste (or Thai red curry paste)
