Ingredients
- 3/4 cup all-purpose flour
- 4 teaspoons baking powder
- 3/4 teaspoon salt
- 1/2 teaspoon garlic powder
- 4 eggs
- 2 1/2 cups grated zucchini (about two zucchinis)
- 1/4 cup canola oil, plus more for oiling the griddle
Cooking Instructions
- In a sifter, combine the flour, baking powder, salt, and garlic powder.
- In a large mixing bowl, whisk the eggs for one minute or until foamy. Add the zucchini and mix well. Sift in the flour mixture and beat until combined. Add the 1/4 cup canola oil and beat well until the batter has the consistency of heavy cream. If it seems thicker, add a few tablespoons of water (one at a time) to thin.
- Preheat an electric griddle to 375 degrees, or place a large, heavy, non-stick skillet on the stove and turn the heat to medium. The griddle is hot enough when a drop of water bounces on it.
- Lightly oil the griddle. Form latkes, using about two tablespoons of batter for each. Cook for about two minutes, or until bubbles pop on the surface of the latke. Turn and cook on the other side until golden brown. Serve hot.
Substitution(s)
- To vary the flavor, substitute finely grated carrots for half the zucchini.
- This dish is excellent with roast chicken or London broil, but it also goes very well with lamb.
Make-Ahead
- Batter can be prepared up to three hours before you plan to make the latkes. You can make the latkes ahead of time and store, them, loosely covered, in a 200 degree oven for about an hour or so.

- Leftover latkes should be kept in the refrigerator and used within a day.

- To peel or not to peel the zucchini? Its up to you. Some people like the pretty green flecks in the latkes, but picky eaters may balk at seeing anything green in their food. For the choosy members of the family, it might be wise to peel the zucchini first.
If your child loves dip, serve these with a little dish of tomato sauce for dipping.
