- 1 cup cooked beans, preferably pinto, drained
- 1/4 teaspoon freshly ground black pepper
- 1 pound zucchini or other summer squash, cut into bite-size pieces 1/4 inch thick
- Salt
- Lemon (optional)
- 2 to 3 ounces crumbled queso fresco or feta cheese
- Chopped parsley or cilantro (optional)
