Juice of 1 lemon 4 to 6 large artichokes 1/4 cup olive oil 1 yellow onion 1 teaspoon minced garlic Pinch of dried oregano (optional) 1 cup water, or as needed 4 cups vegetable or chicken stock 6 tablespoons (3/4 stick) unsalted butter 1 1/2 cups Arborio rice 1/2 cup dry white wine Salt and freshly ground pepper, to taste 1/4 cup grated Parmigiano-Reggiano cheese, plus more for serving (optional)
