Ingredients
- 2 Tblsp olive oil
- 2 minced garlic cloves
- 1 med. onion, chopped
- 2 carrots, pared & sliced
- 1 zucchini, chopped
- 3 sliced scallions
- 3 sliced celery stalks
- Saute a few minutes in a large saucepan, then add:
- 1 can diced tomatoes
- 1/3 cup parsley
- 1 can drained kidney or cannellini beans
- 1 cup water
- 1 cup wine
- 3 cups beef broth
- salt & pepper to taste
