Baked Lentils With Tomato


You will need:

1 cup brown lentils
3 tablespoons olive oil
1 medium onion
28 oz. can crushed tomatoes
3 cloves garlic
2 carrots (diced)
2 celery stalks (chopped)
3 small zucchini (sliced)
3 ¾ cups water or stock
¼ tsp ground black pepper
1 tsp. dried oregano
1 tsp. dried basil
½ cup fresh parsley (chopped)
3 tablespoons red wine vinegar
¼ tsp. sugar
Fresh Romano cheese – grated
