- 1 cup corn
- 4 cloves garlic, chopped
- 1 cup grape tomatoes, halved
- 1 14-oz. can black beans, rinsed, drained
- 2 heaping tablespoons jarred jalapenos, chopped [or 4 oz. chopped mild green chiles, if you prefer]
- 1 lime - for zest, and juice
- 1/3 cup pine nuts
- 8 ounces of block feta or goat cheese, diced
- For garnish: fresh chopped cilantro, lime wedges
