Plum-glazed Pork Loin

Ingredients

  • 3 ripe red plums, pitted and coarsely chopped
  • 1/4 cup golden raisins
  • 2 teaspoons minced fresh ginger
  • 1 small onion, chopped
  • 1/3 cup sugar
  • 2 tablespoons cider vinegar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon curry powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 boneless pork loin roast (about 21/4 pounds), trimmed
  • 3/4 pound green beans, trimmed
  • 1 teaspoon Dijon mustard
  • 1 tablespoon cornstarch mixed with1 tablespoon water
