Gia's Spring Chicken

Ingredients

  • 2 boneless chicken breasts, cut in half
  • Kosher salt
  • Freshly ground black pepper
  • Flour for dredging plus 1 teaspoon
  • 2 tablespoons vegetable oil
  • 3 tablespoons butter
  • yellow onion, chopped
  • 3 cloves garlic, minced
  • 6 scallions, chopped
  • 1/3 to cup chicken broth
  • 1 tablespoon capers, rinsed and lightly crushed
  • 2 tablespoons chopped parsley
  • 1 lemon, sliced thinly

Description

This Is A Chicken Dish I Created Recently And Everybody Loved It! It's Light And The Taste Is Very Crisp And Clean. I Serve It With A Nice Salad And Ice Tea. Not Sure How Well Leftovers Hold Up Though..
