  • 3/4 cup almond cream (recipe below)
  • 1/4 cup pastry cream (recipe below)
  • 1 tablespoon dark rum
  • 1 large egg
  • 1 trinket (see above)
  • 6 tablespoons (3 ounces) unsalted butter, at room temperature
  • 3/4 cup confectioners sugar
  • 3/4 cup ground blanched almonds
  • 2 teaspoons all-purpose flour
  • 1 teaspoon cornstarch
  • 1 large egg, at room temperature
  • 2 cups whole milk
  • 1 plump, moist vanilla been, split and scraped
  • 6 large egg yolks
  • 1/2 cup sugar
  • 1/3 cup cornstarch, sifted
  • 3 1/2 tablespoons (1 3/4 ounces) unsalted butter, softened and cut into 3 pats
