  • 2 tablespoons vegetable oil
  • 1 1/4 teaspoon salt, divided
  • 1 tablespoon cumin
  • 1 cup white rice
  • 1/4 cup chopped cilantro leaves
  • 1 lime, juiced
  • Chopped red onion, for garnish, if desired
