Ingredients

  • Kosher salt
  • 1 1/2 cups dry orecchiette
  • 1 teaspoon olive oil
  • 1/3 cup plus 3 tablespoons butter, divided
  • 1/3 (1.7 ounces) cup all-purpose flour
  • 1/2 teaspoon freshly grated nutmeg
  • 1/4 cup long-cooking grits
  • 4 medium cloves garlic, finely minced
  • 6 cups milk, divided
  • 1/2 pound okra, sliced into 1/2-inch pieces
  • 8 ounces grated sharp white cheddar cheese (about 2 cups)
  • 1 teaspoon freshly ground black pepper
  • 2 to 3 cups fresh bread crumbs (I used brioche)
