- 1/2 pound andouille sausage, cut into half moons about 1/2-inch thick
- 1 green bell pepper, cut into bite-size pieces
- 2-3 celery stalks, diced
- 1 red onion, diced
- 2-3 clove garlic , grated or finely chopped
- 4 fresh okra, sliced (optional)
- 1 tablespoon butter
- 1 tablespoon flour
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 cup chicken stock or beer
- 4 eggs, cooked the way you like them
