Ingredients

Serves 6 to 8

  • 1 pound Yukon gold potatoes
  • 1 tablespoon plus 2 teaspoons salt
  • 1 tablespoon lemon juice
  • 35 large fresh morels, wiped clean
  • 2 to 3 ramps (wild onions),, roots and greens trimmed (greens reserved for garnish), cut into 1/8-inch rounds
  • 5 tablespoons unsalted butter
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons heavy cream
  • 2 tablespoons milk
  • 3 tablespoons freshly grated Parmesan cheese
