  • 2 small heads savoy cabbage
  • 1 guinea hen, about 3 pounds
  • Salt and freshly ground black pepper
  • 14 thin slices bacon
  • 1 tablespoon plus 1 teaspoon unsalted butter
  • 2 apples, cored and cut into eighths
  • 1/2 teaspoon sugar
  • 1 cup dry white wine
  • 1/2 cup Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
