- 1/2 medium head red cabbage, (about 1 pound) , cored and shredded
- 2 medium carrots, peeled and shredded
- 1 red bell pepper, r, stemmed, seeded, and thinly sliced
- 4 scallions, thinly sliced
- 1 small red onion, finely chopped (1 Cup)
- 1 Granny Smith apple, cored and shredded
- 2 garlic cloves, very finely chopped
- 1 to 2 teaspoons crushed red-pepper flakes
- 1 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup beer
- 1/4 cup light-brown sugar
- 2 tablespoons freshly squeezed lemon juice, plus more to taste
- 1 tablespoon malt, cider, or distilled white vinegar, plus more to taste
- 1 cup dry roasted peanuts
- Coarse salt and freshly ground pepper
