Bruce's Spicy Peanut Slaw

Ingredients

Serves 8 to 10

  • 1 medium head green cabbage, (about 2 pounds), cored and shredded
  • 1/2 medium head red cabbage, (about 1 pound) , cored and shredded
  • 2 medium carrots, peeled and shredded
  • 1 red bell pepper, r, stemmed, seeded, and thinly sliced
  • 4 scallions, thinly sliced
  • 1 small red onion, finely chopped (1 Cup)
  • 1 Granny Smith apple, cored and shredded
  • 2 garlic cloves, very finely chopped
  • 1 to 2 teaspoons crushed red-pepper flakes
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup beer
  • 1/4 cup light-brown sugar
  • 2 tablespoons freshly squeezed lemon juice, plus more to taste
  • 1 tablespoon malt, cider, or distilled white vinegar, plus more to taste
  • 1 cup dry roasted peanuts
  • Coarse salt and freshly ground pepper
