- Coarse salt and freshly ground pepper
- 1/4 cup Homemade Chicken Stock
- 1 tablespoon extra-virgin olive oil
- 4 six-ounce salmon fillets
- Arugula, washed well and dried, for garnish
- Lemon wedges, for garnish
