- 1/4 cup all-purpose flour, plus more for work surface
- Pate Brisee
- 1 vanilla bean
- 3/4 cup sugar
- Pinch of coarse salt
- 1 teaspoon ground cinnamon
- 3 honeycrisp apples, peeled, cored, and cut into 1/2-inch wedges
- 3 Cortland apples, peeled, cored, and cut into 1/2-inch wedges
- 3 Granny Smith apples, peeled, cored, and cut into 1/2-inch wedges
- 1 tablespoon freshly squeezed lemon juice
- 1 pint fresh raspberries
- 2 tablespoons unsalted butter, cut into small pieces
- 1 large egg
- 1 tablespoon heavy cream
- Fine sanding sugar, for sprinkling
