Ingredients

Makes one 13-by-9 1/4-inch pie

  • 1/4 cup all-purpose flour, plus more for work surface
  • Pate Brisee
  • 1 vanilla bean
  • 3/4 cup sugar
  • Pinch of coarse salt
  • 1 teaspoon ground cinnamon
  • 3 honeycrisp apples, peeled, cored, and cut into 1/2-inch wedges
  • 3 Cortland apples, peeled, cored, and cut into 1/2-inch wedges
  • 3 Granny Smith apples, peeled, cored, and cut into 1/2-inch wedges
  • 1 tablespoon freshly squeezed lemon juice
  • 1 pint fresh raspberries
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 large egg
  • 1 tablespoon heavy cream
  • Fine sanding sugar, for sprinkling
