  • 1 tsp. Dijon mustard
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup chopped green onions
  • 1/4 cup slivered fresh mint leaves
  • 4 cups baby spinach
  • 1 cup orange segments, cut into 1-inch pieces
  • 1/2 cup fresh raspberries
