Pork Tenderloin With Cider Glaze And Dried Fruits

Ingredients

  • 2 large pork tenderloins, 2 1/2 lb. total,
    trimmed of excess fat
  • 4 Tbs. olive oil
  • 1/4 tsp. sweet paprika
  • 1/4 tsp. ground cumin
  • Large pinch of cayenne pepper
  • 1/4 tsp. ground cloves
  • 1/4 tsp. salt, plus more, to taste
  • Freshly ground black pepper, to taste
  • 1/3 cup dried apricots, coarsely chopped
  • 1/3 cup dried pears, coarsely chopped
  • 3 Tbs. golden raisins
  • 1 1/2 Tbs. sherry vinegar or white wine vinegar
  • 1 tsp. sugar
  • 1 3/4 cups water
  • 3 cups apple cider
  • 2 bay leaves
  • 4 whole cloves
  • 1 1/2 cups chicken stock
