Turkey Mulligatawny Soup

Ingredients

  • 3 Tbs. unsalted butter
  • 1 boneless, skinless turkey breast half, about 1 1/2 lb., cut into
    ; bite-size cubes
  • 1 yellow onion, finely chopped
  • 3 celery stalks, finely chopped
  • 2 carrots, finely chopped
  • 1 garlic clove, minced
  • 1 Tbs. curry powder
  • 4 cups chicken broth
  • 1/2 cup long-grain white rice
  • 1 cup plain yogurt
  • Salt and freshly ground pepper, to taste
  • 1/4 cup minced fresh cilantro (optional)

Description

In Place Of The Fresh Turkey Breast, You Can Use Leftover Cooked Turkey Or A Purchased Rotisserie Chicken. Remove And Discard The Skin And Bones, And Cut The Meat Into Bite-size Pieces. Add The Cooked Turkey Or Chicken To The Soup Along With The Yogurt.
