Ingredients

For the beef

  • 200 g sirloin steaks, thinly sliced
  • 1 tsp sugar
  • 1 tbsp soy sauce
  • 2 tsp mirin
  • 1 tsp dark toasted sesame oil
  • 1 tsp sesame seeds
For the noodles

  • 250 g sweet potato glass noodles, or rice vermicelli noodles, broken into thirds
  • 2 tbsp soy sauce
For the omelette

  • 2 tbsp vegetable oil
  • 2 eggs, lightly beaten
For the vegetables

  • 2 tbsp vegetable oil
  • 1 large onion, sliced
  • 4 cloves garlic, crushed
  • 3 spring onions, cut into thin strips
  • 1 carrot, cut into thin strips
  • 12 fresh shiitake mushrooms, sliced
  • 150 g spinach leaves
  • 3 tbsp toasted sesame seeds, crushed
  • 3 tbsp dark sesame oil
  • 2 tbsp soy sauce
  • tsp salt
  • 1 tsp black pepper
