For the duck

  • 4 X180g duck breast
  • 1 tbsp vegetable oil
  • 1 tsp chinese five spice, powder
  • 2 tbsp clear honey
For the wild mushrooms and peas

  • 120 g unsalted butter
  • 1 shallots, peeled, finely chopped
  • 160 g wild mushrooms
  • dashes of lemon juice
  • 50 ml water
  • 50 ml chicken stock
  • 100 g peas
  • 1 tbsp finely chopped fresh mint
