Grilled lamb and halloumi souvlaki

Ingredients

  • 300 g lamb, (such as leg of lamb), cut into cubes
  • 200 g halloumi cheese, cut into cubes
  • 12 Padron peppers, (or alternatively 6 red peppers roasted in olive oil, halved)
  • 2-3 tbsp olive oil
  • 1 lemon, juice and zest
  • 1 tsp ground cumin
For the mint pesto

  • 8 stalks fresh mint, leaves only
  • 1 tbsp rosemary, leaves
  • 1 tbsp macadamia nuts, or blanched almonds
  • 1 cloves garlic
  • squeeze lemon juice, to taste
  • 3-4 tbsp olive oil
