- 200 g halloumi cheese, cut into cubes
- 12 Padron peppers, (or alternatively 6 red peppers roasted in olive oil, halved)
- 2-3 tbsp olive oil
- 1 lemon, juice and zest
- 1 tsp ground cumin
- 8 stalks fresh mint, leaves only
- 1 tbsp rosemary, leaves
- 1 tbsp macadamia nuts, or blanched almonds
- 1 cloves garlic
- squeeze lemon juice, to taste
- 3-4 tbsp olive oil
