Ingredients
- 150 g long grain rice
- 750 ml light stock or water
- pinches saffron, threads
- 2 tbsp finely chopped fresh dill
- 200 g button mushrooms, sliced
- 150 g butter, and some for frying
- 1 whole salmon, sides filleted off (see Cooks note below)
- 2 jars salmon caviar
- 1 packet puff pastry
- 1 egg, lightly beaten
- 1 lemon, juice only
- 500 g spinach, lightly wilted, to serve
