Russian-style salmon pie

Ingredients

  • 150 g long grain rice
  • 750 ml light stock or water
  • pinches saffron, threads
  • 2 tbsp finely chopped fresh dill
  • 200 g button mushrooms, sliced
  • 150 g butter, and some for frying
  • 1 whole salmon, sides filleted off (see Cooks note below)
  • 2 jars salmon caviar
  • 1 packet puff pastry
  • 1 egg, lightly beaten
  • 1 lemon, juice only
  • 500 g spinach, lightly wilted, to serve
