Ingredients
For the spicy mango sauce- 1 ripe mango, peeled and diced
- 2 tbsp vegetable oil
- 1/2 scotch bonnet pepper, seeds removed, finely diced or 1/2 tsp dried chilli flakes
- 2 large red onions, finely sliced
- 50 g caster sugar
- 50 ml white wine vinegar
- 4 x 125 g small chicken breasts, batted out to 5mm thick escallops
- 1 tbsp Jamaican jerk paste
- generous pinch ground black pepper
- 3 tbsp white wine vinegar
- 8 - 10 rice paper roll wrappers
- 1 handfuls mixed baby salad leaves
- 8 - 12 small mint leaves, optional
- 2 carrots, shredded
- 2 spring onions, green part only, shredded
- 1/2 cucumber, shredded
- 1 tsp black sesame seeds
