Roast leg of lamb with herb crust

Ingredients

  • 1 leg of lamb, boned (bones reserved and chopped)
  • a few sprigs thyme
  • a few sprigs rosemary
  • 2 cloves garlic, cut into slithers
  • 2 tbsp olive oil
  • Dijon mustard, for brushing
For the herb crust

  • 400 g dried breadcrumbs
  • 150 g flat leaf parsley, roughly picked
  • 3 cloves garlic
  • 60 ml olive oil
  • 20 g Dijon mustard
