Ingredients

For the dark chocolate and herb dessert cake

  • 160 ml water
  • 1 tbsp rosemary, chopped
  • 1 tbsp chopped thyme
  • 1 tsp lavender flowers
  • 185 g self-raising flour
  • 70 g dark cocoa powder
  • 1 pinches sea salt
  • 225 g caster sugar
  • 110 g butter
  • 2 medium eggs
  • 140 ml evaporated milk
For the manuka honey ricotta

  • 500 g ricotta cheese
  • 3 tbsp honey, preferably manuka honey from New Zealand
  • 1 lemons, zest
  • 1 pinches sea salt
For the almond caramel

  • 100 g blanched flaked almonds
  • 200 g caster sugar
For the decoration

  • 1 sprig rosemary
  • 1 sprig thyme
  • 1 tsp lavender flowers
  • 1 tbsp icing sugar
  • 1 tbsp honey, preferably manuka honey from New Zealand, to drizzle
