Almond and chocolate meringue cake

Ingredients

  • 4 egg whites
  • 250 g caster sugar
  • 1 tsp vanilla extract
  • 1/2 tsp white wine or cider vinegar
  • 150 g ground almonds, lightly toasted
  • 175 g dark chocolate, 70% cocoa solids
  • 55 ml water
  • 150 ml double cream, lightly whipped
  • 1 tbsp icing sugar
  • 3-4 tbsp dark rum
To decorate:

  • icing sugar and grated chocolate
