Ingredients

  • 30 shortbread cookies (Lorna Doone)
  • 1/2 stick (1/4 cup) butter, softened
  • FILLING
  • 3/4 cup sugar
  • 5 Tbsp cornstarch
  • 1/4 cups whole milk
  • 4 large eggs, in a medium bowl
  • stick butter, cut up
  • 3/4 cup sweetened flaked coconut
  • 1 tsp vanilla extract
  • 1/4 cup toasted blanched (without skin) almonds, finely chopped
  • 1/2 tsp almond extract
  • 4 drops green food color
  • 1 cup heavy (whipping) cream
  • Garnish: Jordan almonds
