Sesame, Snow Pea & Noodle Salad

Ingredients

  • 4 cups small snow peas (12 ounces), trimmed of stem ends and strings
  • 1/2 pound daikon radish, cut into julienne (2 cups)
  • 8 ounces soba noodles (see Note)
  • 2 tablespoons rice vinegar
  • 1 tablespoon miso mixed with 1 tablespoon hot water
  • 1 tablespoon canola oil
  • 2 teaspoons sugar
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon finely chopped fresh cilantro
  • Salt to taste
  • Hot sauce to taste
  • 1 red bell pepper, thinly sliced
  • 1 tablespoon sesame seeds, toasted (see Tip)
