- 4 cups small snow peas (12 ounces), trimmed of stem ends and strings
- 1/2 pound daikon radish, cut into julienne (2 cups)
- 8 ounces soba noodles (see Note)
- 2 tablespoons rice vinegar
- 1 tablespoon miso mixed with 1 tablespoon hot water
- 1 tablespoon canola oil
- 2 teaspoons sugar
- 1 teaspoon grated fresh ginger
- 1 tablespoon finely chopped fresh cilantro
- Salt to taste
- Hot sauce to taste
- 1 red bell pepper, thinly sliced
- 1 tablespoon sesame seeds, toasted (see Tip)
