Spinach With Yogurt & Chickpeas

Ingredients

  • 2 tablespoons  unsalted butter
  • 1 small   yellow onion, medium diced (about 1 cup)
  • 3 large   cloves garlic, chopped (1-1/2 Tbs.)
  • 1 tablespoon  minced fresh ginger
  • 1 teaspoon  garam masala
  • 1/2 teaspoon  ground coriander
  • 2 10 ounce boxes   frozen whole-leaf spinach, thawed
  • 1/2 teaspoon  kosher salt; more to taste
  •   Freshly ground black pepper
  • 3/4 cup   plain whole-milk Greek yogurt or regular whole-milk yogurt, strained
  • 1 cup   canned chickpeas, drained and rinsed

Description

Part Side Dish, Part Sauce, This Pureed Spinach Is My Take On The Indian Dish Called Saag. Thick, Is The Key To Getting The Texture Of This Dish Just Right. You Can Buy It At Most Grocery Stores, Or By Straining Regular Whole-milk Yogurt.
