  • 1-1/2 pounds  large, shrimp, peeled and deveined
  • 2 tablespoons  Cajun seasoning
  • 1/4 cup  extra-virgin olive oil
  • 1/4 pound  diced andouille sausage
  • 2 teaspoons  chopped garlic
  • 1/4 cup (1/2 stick)  unsalted butter
  • 2 small  piquillo peppers, chopped
  • 1 teaspoon  cayenne pepper
  • 1 teaspoon  red pepper flakes
  • 1/4 cup  red wine
  • 1/4 cup  fresh parsley, chopped
  • 1/4 teaspoon  salt
  • 1/4 teaspoon  black pepper
  •   Sliced scallions (optional)
