- 2 tablespoons lemon juice
- 1 tablespoon water
- 3 cloves garlic, halved
- 1 teaspoon Dijon-style mustard
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1/4 cup soybean cooking oil
- 10 cups torn romaine
- 2 cups cut-up red, yellow, and/or orange cherry and/or pear tomatoes
- 1/4 cup pitted kalamata or ripe olives, cut up
- 1 recipe Tofu Croutons (see recipe below)
- 1/4 cup finely shredded Parmesan cheese (1 ounce)
