Ingredients

  • 2   medium artichokes (about 10 ounces each)
  •   Lemon juice
  • 3 tablespoons  lemon juice
  • 2 tablespoons  olive oil or salad oil
  • 1 tablespoon  water
  • 1 tablespoon  snipped fresh oregano or 1/2 teaspoon dried oregano, crushed
  • 1/2 cup  bulgur
  • 1/4 teaspoon  salt
  • 1   large tomato, peeled, seeded, and chopped (1-1/4 cups)
  • 1/2 cup  crumbled feta cheese (2 ounces)
  • 1/4 cup  snipped parsley
  •   Shredded lettuce
  • 1 cup  hot water
