Moroccan-style Short Ribs

Ingredients

  • 1 tabespoon  dried thyme, crushed
  • 1 teaspoon  salt
  • 1 teaspoon  ground ginger
  • 1 teaspoon  black pepper
  • 1/2 teaspoon  ground cinnamon
  • 5 pounds  beef short ribs
  • 2 tablespoons  olive oil
  • 3 cups  beef broth
  • 1 14-1/2-ounce can  diced tomatoes
  • 4 cloves  garlic, minced
  • 1 16-ounce can  garbanzo beans, rinsed and drained
  • 1 large  onion, cut into wedges
  • 1 medium  fennel bulb, trimmed and cut into wedges
  • 1 cup  chopped carrot
  • 1 10-ounce package  quick-cooking couscous
  • 1/2 cup  sliced almonds, toasted
  • 1/2 cup  pitted kalamata olives, halved
