Ingredients

  • 5   large egg whites
  • 1 1/3 cups  granulated sugar
  • 1/2 teaspoon  cornstarch
  • 1/2 teaspoon  white vinegar or lemon juice
  • 2 cups  heavy cream
  • 3/4 cup  confectioners' sugar
  • 1   vanilla bean, split and seeds scraped
  • 2 pints  raspberries
  • 1/2 cup  shelled pistachios, coarsely chopped
  • 1/4 cup  thinly sliced mint leaves

Description

Eton Mess Is A Lightly Sweet, Old-fashioned British Dessert Made By Blending Whipped Cream With Freshly Crushed Berries And Crisp Meringue. As A Shortcut, Use Store-bought Meringues Instead Of Homemade.
