Roasted Potato Salad

Ingredients

  • 10 cups  coarsely chopped red potatoes (about 3 1/2 pounds)
  • 1 medium  yellow onion, coarsely chopped
  • 2 cloves  garlic, minced
  • 1 teaspoon  crushed dried rosemary leaves
  • 1/4 cup  olive oil
  • 2 tablespoons  red-wine vinegar
  • 1 tablespoon  Dijon-style mustard
  • 1 tablespoon  chopped fresh parsley
  • 1/2 teaspoon  salt
  • 1/4 teaspoon  ground black pepper
  • 6 ounces  cubed mild provolone cheese
