Grandma Ginger's Fish Casserole

Ingredients

  • 4 teaspoons  extra-virgin olive oil, divided
  • 1   medium onion, very thinly sliced
  • 1/2 cup  dry white wine
  • 8 ounces  Pacific cod (see Note) or tilapia, cut into 2 pieces
  • 1 teaspoon  chopped fresh thyme or 1/4 teaspoon dried
  • 1/4 teaspoon  kosher salt
  • 1/4 teaspoon  freshly ground pepper
  • 3/4 cup  finely chopped whole-wheat country bread, (about 1 slice)
  • 1/4 teaspoon  paprika
  • 1/4 teaspoon  garlic powder
  • 1/2 cup  finely shredded Gruyere or Swiss cheese
