Grilled Salmon Salad With Oil-free Vinaigrette

Ingredients

  • 1 recipe  Oil-Free Dressing (see recipe)
  • 1-1/4 pounds  fresh or frozen salmon fillet
  •   Ground black pepper
  • 3 cups  torn mixed greens
  • 1 cup  cucumber slices, quartered
  • 1 cup  steamed asparagus or green beans, cut into 2-inch pieces and chilled*
  • 1/2 cup  radish slices, quartered
  • 1/4 cup  sliced green onions
  •   Fresh dillweed sprigs or tarragon sprigs (optional)

Using Fruit Pectin Instead Of Oil In A Dressing Makes For A Fat Free Dressing. Try It On The Grilled Salmon And Greens Or On Your Own Favorite Salad.
