Ingredients

  •   Fine dry breadcrumbs, (about 1 1/2 tablespoons)
  • 1 tablespoon  unsalted butter, or extra-virgin olive oil
  • 1 1/2 tablespoons  all-purpose flour
  • 1/2 cup  low-fat milk
  • 1/2 teaspoon  Dijon mustard
  • 1/4 teaspoon  salt
  •   Freshly ground pepper, to taste
  • 2   large egg yolks
  • 1/2 cup  crumbled creamy goat cheese, (2 1/2 ounces)
  • 3   large egg whites, at room temperature (see Tip)
  • 1/8 teaspoon  cream of tartar
  • 1 clove  garlic , halved
  • 1 tablespoon  lemon juice
  • 1 tablespoon  honey
  • 1/4 teaspoon  salt
  •   Freshly ground pepper, to taste
  • 8 cups  lightly packed mixed salad greens
  • 1/2 cup  crumbled goat cheese, (2 1/2 ounces)
