  • 1 6-ounce package  long grain and wild rice mix
  • 8 ounces  sliced fresh mushrooms (3 cups)
  • 2 medium  cooking apples (such as Granny Smith or Jonathan), cored and chopped
  • 1 cup  shredded carrot
  • 1/2 cup  thinly sliced green onions
  • 1/2 teaspoon  pepper
  • 1 5- to 6-pound  whole roasting chicken
  • 2 to 3 tablespoons  apple jelly, melted
  •   Apple wedges (optional)
