Boston Baked Beans With Pancetta

Ingredients

  • 1 pound  dry navy beans or dry great northern beans (2-1/3 cups)
  • 8 cups  cold water
  • 6 ounces  pancetta (Italian bacon) or bacon, cut up
  • 1 cup  chopped onion
  • 1/4 cup  packed brown sugar
  • 1/4 cup  molasses
  • 1/4 cup  maple syrup or maple-flavored syrup
  • 1/4 cup  Worcestershire sauce
  • 1 teaspoon  dry mustard
  • 1/2 teaspoon  salt
  • 1/4 teaspoon  pepper
  • 4 ounces  pancetta or bacon, cooked crisp and drained (optional)
